Stuffed Cucumber

  • 700 g Stewed cucumbers
  • 250 g Mixed minced meat
  • 2 tbsp Milk
  • 1 disc Toast
  • 2 Onions
  • 100 g Cherry tomatoes
  • Salt and pepper
  • 0,5 bunch Chopped parsley
  • 200 ml Meatsoup
  1. Peel the cucumber, cut in half lengthways and scrape out the stones with a spoon.
  2. Minced meat with the slice of toast bread soaked in milk and squeezed out, 1 finely chopped onion, 50gr. Mix the chopped tomatoes, salt, pepper and chopped parsley. Pour the minced mixture into the cucumber halves.
  3. Prepare a bed of the remaining onions and tomatoes, each sliced ​​in a roasting pan or casserole dish. Place the cucumber halves on top and fill up with the broth.
  4. Cook in the preheated oven on the 2nd rack from below at 180 ° C (convection not suitable) for 45-50 minutes. And serve hot.
