Stuffed Cucumber
The perfect stuffed cucumber recipe with a picture and simple step-by-step instructions.
- 700 g Stewed cucumbers
- 250 g Mixed minced meat
- 2 tbsp Milk
- 1 disc Toast
- 2 Onions
- 100 g Cherry tomatoes
- Salt and pepper
- 0,5 bunch Chopped parsley
- 200 ml Meatsoup
- Peel the cucumber, cut in half lengthways and scrape out the stones with a spoon.
- Minced meat with the slice of toast bread soaked in milk and squeezed out, 1 finely chopped onion, 50gr. Mix the chopped tomatoes, salt, pepper and chopped parsley. Pour the minced mixture into the cucumber halves.
- Prepare a bed of the remaining onions and tomatoes, each sliced in a roasting pan or casserole dish. Place the cucumber halves on top and fill up with the broth.
- Cook in the preheated oven on the 2nd rack from below at 180 ° C (convection not suitable) for 45-50 minutes. And serve hot.
