Ingredients for 4 servings:
- 300 g turkey breast fillet(s) or chicken breast
- e.g. salt and pepper
- e.g. teriyaki sauce or BBQ sauce
- 1 pineapple
- 250 g bacon or other ham

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the meat into 2-3 cm wide strips and season all over with pepper and salt. Brush the sliced meat generously with the teriyaki sauce and toss to coat. Then refrigerate for at least half an hour to marinate. Cut off the top and leaves of the pineapple, as well as the bottom, and set aside. Peel the pineapple thoroughly, cut it in half lengthwise, and cut out the core. Fill the resulting cavity with the marinated meat and put the two halves back together. Season the pineapple all over with pepper and brush with the remaining teriyaki sauce from the marinade. Secure the top and bottom of the pineapple back to the fruit with skewers. Wrap the pineapple tightly all around with bacon and secure it with skewers or roulade pins. Cook the pineapple in the oven at 150°C (130°C fan-assisted oven) for 45-60 minutes. Alternatively, it can also be prepared in a smoker or kettle grill and is best grilled at an internal temperature of 70°C.
