Stuffed Kamut Pumpkins

  • 1 Kg Kamut risotto
  • 8 piece Pumpkins
  • 8 El Pesto
  • 4 piece Sun-Dried tomatoes
  • 1 piece Mozzarella
  1. Make a kamut risotto (I just posted the recipe).
  2. 8 Boil small pumpkins briefly (approx. 5-7 minutes) in salted water. Cooled “behead” and hollow out.
  3. Pour in the kamut risotto. Cover with sun-dried tomatoes and mozzarella and bake for 10-15 minutes at 180 degrees. Pesto with it….
