Stuffed mushrooms

Ingredients for 2 servings:

  • 9 large mushrooms, total 350 g
  • 1 large onion(s), total 150 g
  • 65 g feta cheese
  • 3 balls of spinach, frozen
  • 1 tbsp crème fraîche or sour cream
  • 1 tbsp bacon cubes
  • 50g Gouda
  • 2 tbsp mayonnaise
  • 1 tbsp oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with spinach, feta and bacon cubes

Clean the mushrooms and wipe them with kitchen paper. Carefully remove the stems. Finely dice the onion and mushroom stems and fry in hot oil until golden brown. Add the diced feta and bacon and fry briefly. Then add the spinach to the pan and sauté until the liquid has evaporated. Finish with crème fraîche or sour cream. Season with salt and pepper. Stuff the mushroom caps with the stuffing. Finely grate the Gouda cheese, mix with the mayonnaise, and spread the mixture over the filling. Place the mushrooms in a greased baking dish and bake in a preheated oven at 180°C or 160°C fan-assisted oven for approx. 20 minutes. Serve immediately.
