Ingredients for 4 servings:
- 16 m.-sized mushrooms
- 100 g smoked ham, finely diced
- 1 stalk(s) leek
- 200 g sheep’s cheese
- 1 tsp paprika paste
- 1 cl red wine
- Salt
- Pepper from the mill
- some cheese, grated
- some olive oil

great as a side dish for barbecue or brunch / buffet
Clean the mushrooms (brush, never wash) and remove the stems so the head can be stuffed. Sauté the finely chopped leek and ham in a little olive oil. Season with salt, pepper, and paprika. Deglaze with the red wine. Add the finely diced feta cheese and stir until the cheese has melted. Stuff the mushrooms with the mixture and sprinkle with grated cheese. Bake in a preheated oven at 160°C for about 10 minutes.
