Stuffed mushrooms with prunes, cheese and bacon

Ingredients for 4 servings:

  • 24 m.-sized mushrooms
  • 1 onion(s)
  • 2 garlic cloves, squeezed
  • 5 prunes, without stones
  • 80 g cheese (Gouda), grated
  • 1 tbsp parsley, finely chopped
  • 1 tbsp breadcrumbs
  • salt and pepper
  • 12 slices of bacon
  • 4 tbsp oil

Clean the mushrooms, carefully twist out the stems, and chop them. Finely chop the onion, press the garlic cloves, and dice the prunes. Mix the chopped mushroom stems, onion, garlic cloves, prunes, Gouda cheese, parsley, and breadcrumbs well and season with salt and pepper. Spread the mixture among the mushroom caps and stack two caps on top of each other. Wrap a slice of bacon around each mushroom (from top to bottom to hold it together) and secure with a toothpick. Fry the mushrooms all around in a pan with the oil.
