Ingredients for 1 servings:

  • 150 g flour
  • 50 g almonds, peeled and ground
  • 115 g butter
  • 50 g powdered sugar
  • 1 pinch of salt
  • 1 egg yolk
  • ½ orange(s) (organic), zest
  • 100 g orange marmalade without pieces
  • ¼ tsp cinnamon
  • 1 piece(s) star anise
  • ½ orange(s) (organic), zest
  • 100 g icing sugar, for dusting

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 10 minutes

For the dough: Quickly knead all ingredients with your hands until smooth and then refrigerate for at least 1 hour. For the filling: Mix the orange marmalade with the remaining ingredients, heat (do not boil), remove from the heat and let stand for at least 1 hour, stirring occasionally. Preheat oven to 180°C (top/conventional heat). Roll out the dough to a thickness of about 2 mm. Cut out stars with a diameter of about 4 cm. Cut out small stars from half of the stars (= top). Place the cookies on a baking sheet lined with baking paper and bake for about 10 minutes until golden brown. Keep an eye on the cookies, as they burn easily. Dust the perforated stars with powdered sugar immediately while they are still warm. Spread some marmalade on the undersides and put the cookies together. Using a small spoon (e.g. an espresso spoon), add a little more marmalade to fill the holes nicely. Once the orange stars have completely cooled, store them in a cool cookie tin. These cookies will have their best flavor after about a week.
