Stuffed papaya with avocado, cream cheese and crunch

Ingredients for 1 servings:

  • 1 papaya, ripe, approx. 350 g
  • ½ avocado(s)
  • 1 tbsp, heaped cream cheese, grainy
  • 4 halved walnuts
  • 1 tbsp Parmesan, grated
  • ½ large lime(s), the juice
  • e.g. salt and pepper
  • e.g. chili flakes
  • 1 tbsp, levelled honey
  • some parsley or coriander, fresh

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

simple, quick, delicious

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit) and prepare a baking sheet or casserole dish. Halve the papaya and scoop out the seeds and some of the flesh. Cut the avocado into small cubes and mix with the cream cheese and all the spices. Season to taste. Fill the papaya halves, sprinkle with Parmesan cheese, and top with the walnut halves. Bake in the oven for about 15-20 minutes. Very large papayas will need a little longer. If they aren’t quite ripe, you can prick them a few times with a toothpick before filling. Tip: Dry the papaya seeds and place them in a pepper mill.
