Stuffed peppers in tomato sauce in the home cooker

Ingredients for 3 servings:

  • 3 bell pepper(s), red
  • 3 onions
  • 500 g minced meat, half and half
  • 1 m.-sized egg(s)
  • 1 m.-sized roll or slice of toast
  • 1 tbsp mustard
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch(s) paprika powder
  • 1 handful of parsley
  • 2 tbsp olive oil
  • 1 can tomato(s) (Pizza tomatoes), 400 g
  • 1 tbsp tomato paste
  • 1 tbsp vegetable broth
  • 300 ml water
  • 1 tsp sugar
  • 1 chili pepper(s)
  • 1 tbsp Italian herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 30 minutes

Wash the peppers, remove the tops, and cut into strips. Remove the stems and seeds. Grate the onions, reserving half for the minced meat mixture. Sauté the onions with 2 tablespoons of olive oil at 175°C for about 5 minutes, add the pepper strips, and cook for another 5 minutes. In the meantime, soak the bread roll or slice of toast and knead the minced meat, egg, bread roll or slice of toast, mustard, salt, pepper, paprika, and parsley into a dough. Stuff the peppers with this mixture and place them in the steamer. Add the canned tomatoes, tomato paste, vegetable stock, and water to the fried onions and pepper strips. Season with Italian herbs, sugar, paprika, and chili pepper. Place the steamer on the heat and simmer at 130°C for 80 minutes. Don’t forget to activate the stirrer. Season the sauce again to taste and thicken if necessary. We like to serve it with rice.
