Ingredients for 4 servings:
- 4 wholemeal rolls
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 1 large tomato(s)
- 1 onion(s)
- 1 tbsp oil
- 1 small can of corn
- 1 spring onion(s)
- 125 g light mozzarella
- salt and pepper
- Parsley
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut off the tops of the rolls and hollow out the bottoms. Dice or slice the bell pepper, tomato, onion, and spring onion. Drain the corn. Dice the mozzarella and mix with the vegetables. Add the oil, 2/3 of the parsley, salt, and pepper to the vegetables, season to taste, and fill the hollowed-out rolls. Sprinkle with the remaining parsley. Bake in a preheated oven at 180°C until the mozzarella melts.
