Stuffed round zucchini

Ingredients for 4 servings:

  • 2 large zucchini, round
  • 500 g herb cream cheese
  • 1 small onion(s), red or white
  • Tomato(s), dried, optional
  • 1 pack of grated cheese for gratin

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Halve the zucchini crosswise. Trim the top and bottom ends so the halves can stand upright. Hollow out the zucchini and place them on a baking sheet lined with parchment paper. For the filling, place the cream cheese in a bowl, finely chop the onion, add it, and mix well. You can also add other ingredients to the filling, such as chopped tomatoes or dried tomatoes. Then fill the zucchini with the mixture and sprinkle with grated cheese. Bake at approximately 200 degrees Celsius (400 degrees Fahrenheit) for about 45 minutes.
