Stuffed sweet potatoes

Ingredients for 2 servings:

  • 2 large sweet potatoes
  • 1 red pointed pepper, finely chopped
  • 1 spring onion(s), finely chopped
  • 1 clove(s) garlic, finely chopped
  • salt and pepper
  • 1 pinch(s) fennel seeds, ground
  • 1 pinch(s) coriander powder
  • chili
  • 1 medium-sized lemon(s)
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Wash the sweet potatoes and cut off a lid. Cook in a steamer until soft. Meanwhile, sauté the finely chopped bell peppers and spring onions for about 2-3 minutes. Scoop out the sweet potatoes and mix this mixture with the bell peppers. Season to taste with salt, pepper, coriander, fennel, and chili. Finally, add the lemon zest. Stuff the sweet potatoes with everything and place in an ovenproof dish and bake in the oven for 20 minutes at 200°C. Perfect with grilled food or as a side salad for dinner.
