Ingredients for 2 servings:
- 2 small zucchini
- 250 g minced beef or mixed
- 1 can/n tomatoes, peeled and diced
- 1 tsp mustard, medium hot
- 1 tsp soy sauce
- 1 egg(s)
- 1 mozzarella
- 2 garlic cloves
- salt and pepper
- oregano
- 1 tsp paprika powder
- basil
- Thyme
Instructions

Wash the zucchini, trim off the stem ends, and halve lengthwise. Then, using a spoon, scoop out the core to create a groove for the filling and place the zucchini in a baking dish. Season the minced meat one after the other with salt, pepper, garlic, mustard, soy sauce, and paprika. The amount depends on your taste. Then add the egg to prevent the meat mixture from falling apart in the oven. Once all the seasonings are well mixed with the minced meat, stuff the zucchini halves. Place the tomatoes in a bowl and season with salt, pepper, garlic, oregano, basil, thyme, and paprika. If using fresh basil, roughly chop it with a knife. Distribute the seasoned tomato cubes evenly among the stuffed zucchini. Finally, thinly slice the mozzarella and distribute them over the zucchini. The zucchini are cooked in a preheated oven at approximately 200°C for 25 to 30 minutes. Serve with rice, for example, and a sparkling white wine.
