Ingredients for 4 servings:
- 2 eggs
- 125 g flour
- 150 ml milk
- 150 ml mineral water
- 1 tbsp mustard
- 6 thick sausages (e.g. salsicce)
- 100 g ham (Serrano)
- 3 tbsp fat for frying
Instructions

Pour the milk, sparkling water, and mustard into a bowl. Separate the eggs and add the egg yolks to the milk. Beat the egg whites with a pinch of salt until stiff peaks form. Add the flour to the milk and mix with a hand mixer. Fold in the beaten egg whites and let rest for about 15 minutes. In the meantime, wrap the sausages in the Serrano ham. Preheat a greased pan (28 cm x 21 cm) to 220°C. Once it’s hot, add the sausages. Pour the pancake batter over the batter. Bake in the oven for about 25-30 minutes, until the batter has risen and is golden brown. Serve with a brown sauce and a salad.
