Stuffed zucchini with minced meat

Ingredients for 4 servings:

  • 4 large zucchini
  • 500 g minced meat, mixed
  • 1 onion(s)
  • 150 g cherry tomatoes
  • 7 baby corn
  • 1 ball of mozzarella
  • ½ pack of feta cheese, approx. 100 g
  • 1 bag(s) of grated cheese, 200 g
  • salt and pepper
  • Paprika powder
  • Fried potato seasoning

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

First, I fry the ground meat. When it’s crumbly, I add the diced onion until it’s translucent. Then I transfer the mince to a mixing bowl and let it cool slightly. In the meantime, I halve the zucchini and scrape out the insides with a teaspoon. Then I cut the tomatoes and mozzarella into small cubes, slice the baby corn, and add everything to the ground meat. I simply crumble the feta cheese with my hands, add it to the mince, and mix everything well. I don’t season the zucchini because it contains a lot of water and is also very flavorless. Instead, I season the filling quite heavily, but this neutralizes after baking. I use salt, pepper, paprika, and fried potato seasoning. I then fill the zucchini halves with the filling and sprinkle some cheese on top. Then I bake them in a hot oven at 200°C (top/bottom heat) for about 30 minutes. We like to eat it with rice and tzatziki or herb curd.
