Stuffed zucchini with turkey

Ingredients for 2 servings:

  • 2 small zucchini
  • 300 g turkey meat
  • 1 tbsp tomato paste
  • 1 m.-sized onion(s)
  • Garlic
  • salt and pepper
  • 300 ml tomato(s), pureed
  • Herbs (basil, parsley, etc.)
  • 200 g cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the turkey into very small cubes. Finely chop the onion and fry in oil. Add the turkey and fry. Then add the tomato paste and mix everything well, finally seasoning with salt, pepper, and garlic. Cut the zucchini lengthwise and hollow out the insides. Stuff with the turkey and sprinkle with cheese. Place in a greased dish and bake at 150°C (fan oven) until the zucchini is soft and the cheese is melted. For the sauce, place the passata in a pan and heat. Season with salt, pepper, garlic, and the finely chopped herbs. Rice goes well with this.
