Sturgeon with onions and cream

Ingredients for 4 servings:

  • 4 fish fillets (sturgeon fillets)
  • 2 large onions, thinly sliced
  • 2 bunch chives, chopped
  • 2 cups sour cream
  • e.g. salt and pepper
  • ½ n. B. lemon(s), the juice
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the sturgeon with salt, pepper, and lemon juice. Preheat oven to 150°C. Brush a baking sheet with oil. Heat a little oil in a pan and sear the fish on one side. Remove from the pan and place raw-side down on the baking sheet. Sauté the onion in the roasting residue until translucent, stirring constantly, and remove from the heat. Top the fish fillets with onion, drizzle with sour cream, and roast in the preheated oven for about 10 minutes. Remove the fillets from the oven, arrange on plates, and sprinkle with chives.
