Summer salad with smoked salmon

Ingredients for 4 servings:

  • 2 bunch radishes
  • ½ head of iceberg lettuce
  • ¼ bunch of spring onions
  • 4 tomatoes
  • 200 g smoked salmon, sliced
  • 1 tsp salt
  • 2 tsp brown sugar
  • 2 cloves garlic, crushed
  • 1 tsp Dill, chopped, or dried
  • 2 tsp mustard, medium hot
  • 40 ml vinegar, 6%
  • 40 ml oil, preferably walnut or dill oil or a mixture of both
  • 80 ml water
  • some sauce (elderflower-cardamom)
  • some nuts, roasted, salted, or peanuts

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut ingredients 1-5 into bite-sized strips. Whisk ingredients 6-13 into a dressing. Mix everything together loosely and, if desired, top with ingredients 14 and 15. As an appetizer or side dish, the salad serves the stated 4 servings. As a main course on a hot summer day, it only needs 2 servings.
