Ingredients for 2 servings:
- 4 eggs
- 1 small zucchini
- 1 tomato(s)
- 2 spring onions
- 75 g feta cheese, diced
- 2 sprigs parsley, flat
- 1 sprig(s) mint
- olive oil
- salt and pepper
- oregano
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
topped with feta
Finely slice the spring onions. Finely dice the zucchini and tomato. Sauté everything in olive oil over medium heat until softened. Whisk the eggs with the spices and herbs and pour over the vegetables. Stir until they begin to set, then crumble the feta over the vegetables and place the whole thing under the grill for about 5 minutes.
