Sun Vortex Soup with Farmer’s Sausage

The perfect sun vortex soup with farmer’s sausage recipe with a picture and simple step-by-step instructions.

  • 0,5 Pc. Endive head fresh
  • 2 tbsp Extra virgin olive oil
  • 100 g Diced Bacon
  • 1 Pc. Chopped onion
  • 2 Pc. Garlic clove chopped
  • 30 g Butter
  • 1 tbsp Flour
  • 1 liter Homemade vegetable broth
  • 1 tsp Thyme oregano, dried, grated in a mortar
  • 2 Pc. Chicken egg yolk fresh
  • 2 Pc. Liquid cream
  • Salt and pepper pinch of nutmeg
  • 2 Pc. Smoked farmer’s sausage
  • 150 g Coarsely grated mountain cheese

Preparation:

  1. Prepare endives, wash, spin dry, cut into strips. Cut the sausages into wheels. Rasp cheese.

Prepare soup:

  1. Heat oil in a saucepan and fry bacon in it. Sweat onion, garlic, add endive and sweat until it disintegrates. Melt the butter in it, dust with flour, deglaze with the vegetable stock, add the spices, simmer on moderate heat for 20-25 minutes. If the soup is too thick, add a little broth. If it is too thick, there is a risk that it will burn.

Complete :

  1. Mix the egg yolks with the cream to add to the soup no more boiling.

Serving:

  1. In a preheated plate, season the wheels and spread cheese with the soup. Enjoy.
