Sunflower seed bread

Ingredients for 1 servings:

  • 250 ml water
  • 75 g yogurt
  • 1 tbsp olive oil
  • 3 tbsp sugar
  • ½ tsp salt
  • 500 g wheat flour (e.g. type 550)
  • 20 g yeast, fresh
  • 150 g sunflower seeds, possibly more
  • 1 egg yolk

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Sprinkle the yeast with a little salt and stir occasionally until it is liquid. Adding water is not necessary, as the yeast reacts with the salt. Mix all ingredients together and knead vigorously. Let the dough rise in a warm place for about 30-45 minutes. Then knead thoroughly again and form into a loaf on a baking sheet and let rise for another 30 minutes. Mix the egg yolk with half a teaspoon of salt and brush the bread with it to give it a nice, shiny, crispy crust. Bake in a preheated oven at 200°C for 50 minutes. The bread is ready when it sounds hollow when tapped on the bottom.
