Sunken Apple Pie with Almonds and Walnuts

The perfect sunken apple pie with almonds and walnuts recipe with a picture and simple step-by-step instructions.

Note:

  • For springform pan 24 – 26 cm
  • For the batter:
  • 150 g Margarine (see note)
  • 100 g Sugar, whiter, finer
  • 200 g Wheat flour, type 405
  • 4 Eggs, size M
  • 1 tbsp Baking powder
  • 1 pinch Salt
  • 3 tbsp Orange juice
  • 1 tbsp Vanilla extract
  • 60 g Almonds, peeled, roughly chopped

For covering:

  • 4 Medium sized apples
  • 2 tbsp Lime juice
  • 1 tbsp Orange juice
  • 1 pinch Cinnamon powder
  • 2 tbsp Honey
  • 40 g Walnuts, coarsely grated
  • 4 tbsp Apricot jam
  • 2 tbsp Orange liqueur

Precondition:

  1. All ingredients must be at room temperature. Prepare the baking pan with baking paper.
  2. Separate the eggs and beat the egg white with a pinch of salt to form a firm mass of snow. Transfer this to another bowl and refrigerate. Mix the flour with the baking powder well.
  3. Peel and halve the apples. Remove the core and cut the apple halves transversely, but do not cut through. Brush the halves with the honey, lime juice and water solution.
  4. Mix the egg yolk and sugar into a foamy white mixture. Add the vanilla extract, then add 2 tablespoons of orange juice and then 3 tablespoons of flour. Now add the margarine in portions and stir until the mixture is homogeneous. Also add the remaining flour in portions and finally mix in the coarsely chopped almonds.
  5. If the mixture is very firm, add another tablespoon of orange juice. Stir until the mixture is homogeneous.
  6. Preheat the oven to 180 degrees bottom heat.
  7. Carefully fold the egg white mass into the egg yolk mass and mix carefully until a homogeneous mass is formed. Pour the cake mixture into the baking pan and press the apple halves tightly together a little bit into the cake mixture (7 pieces in a ring and one piece in the middle). Sprinkle the cake mixture with the walnut pieces.
  8. Bake the cake on medium heat at 180 degrees for 40 minutes.
  9. Mix the apricot jam with the orange liqueur and pour onto the still hot apples with a tablespoon. Let cool, cut into 7 pieces between the apples and serve at room temperature.
