Ingredients for 4 servings:

  • 8 eggs
  • 1 small jar of mayonnaise
  • 3 gherkins
  • 1 bunch of chives
  • 1 large onion(s)
  • 250 ml vegetable broth or meat broth
  • e.g. yogurt
  • salt and pepper
  • 1 tbsp mustard, more to taste

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

as a main course or for grilling

Hard-boil the eggs and halve them. Dice the cucumber, chives, and onion and mix everything with the mayonnaise and mustard. Gradually add the stock, enough to make the sauce creamy. Add more yogurt if desired. Season with salt and pepper. Carefully lower the halved eggs into the sauce and submerge them. Serve with white bread, rolls, or potatoes. You can also serve the eggs as a side dish at a barbecue.
