Ingredients for 4 servings:

  • 80 g rye meal, whole grain
  • 160 g flour
  • 1 packet of baking powder
  • 4 tbsp olive oil
  • 1 pot of yogurt, approx. 150g
  • ¼ tsp bread spice mix
  • 50 ml milk, maybe a little more
  • 200 g tomatoes (chunky pizza tomatoes, seasoned)
  • Olive oil, for the baking tray

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Dough doesn’t need to rise!

For the dough, mix the rye flour, flour, baking powder, and bread spice. Add the olive oil and yogurt and knead. The dough will still be quite crumbly, so keep adding milk until it comes together and has a thick consistency (50-100ml). I make the dough in the Thermomix, and it struggles a bit to get the consistency right, but I think with a little more effort, a regular hand mixer will do the trick. Grease a baking tray well with olive oil and spread the dough thinly. Sprinkle a little flour on it, ideally using a small plastic rolling pin. Place the pizza tomatoes on top, and if you like, add any toppings you like. Bake at 200°C (fan oven) for 15-20 minutes.
