Ingredients for 2 servings:

  • 200 g lentils, red
  • 1 m.-large beetroot, fresh or pre-cooked, diced
  • 10 g fresh ginger, finely chopped
  • 1 clove(s) garlic, fresh, chopped
  • 1 orange(s), juice
  • 1 large onion(s)
  • e.g. chili pepper(s) or chili powder
  • 3 tbsp tomato paste or more
  • e.g. cumin
  • Allspice
  • pepper, black
  • curry
  • 1 tsp, leveled turmeric
  • e.g. Garam Masala (Indian spice mix)
  • e.g. chervil and/or parsley for garnishing
  • e.g. instant vegetable broth
  • 1 tbsp rapeseed oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Briefly fry the red lentils with the chopped garlic, a little chili, and a spoonful of rapeseed oil. Immediately pour in twice the amount of vegetable stock (made with water). Simmer gently for about 10 minutes, until the lentils are tender. Now add the diced, cooked beetroot and continue to heat gently over low heat. Add the finely chopped ginger, orange juice, and the remaining spices. Remove the soup from the heat. Sprinkle with chopped parsley and/or fresh chervil. Garnish with an orange slice, if desired, and serve immediately.
