Ingredients for 6 servings:
- 1 melon(s) (approx. 1.5 kg)
- 2 limes
- 5 tbsp vinegar (sherry vinegar)
- 1 tbsp sea salt, coarse
- 2 tbsp sugar
- 1 pinch(s) of pepper
- 3 tbsp olive oil
- 500 g tomatoes (vine tomatoes), preferably small

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes
Summer dish, quick and unusual
Scoop out the melon flesh with a melon baller. Pour hot water over the cherry tomatoes, then peel them and add them to the melon balls (ideally the same size). Finely zest the limes with a zester and add them to the tomatoes and melon. Squeeze the limes and add the juice. Mix well with the sugar (to taste), olive oil, and sherry vinegar and let it infuse. Season to taste with freshly ground pepper and coarse salt. Important: Serve well chilled. It tastes absolutely delicious and can also be served in the melon.
