Ingredients for 1 servings:

  • 800 g flour (wholemeal flour), dark
  • 800 g flour (type 405)
  • 35 g salt
  • 500 ml milk, lukewarm
  • 450 ml water, lukewarm
  • 65 g yeast, fresh
  • Fat for the Ultra
  • Flour for the Ultra

Tupperware-style party recipe – popular in Luxembourg

Sift flour into a bowl and make a well. Dilute the yeast with salt and add it to the well. Add the milk and water and knead the dough well. Let the dough rest for 15 minutes, then knead again. Grease a 5L Ultra (Tupperware) with butter or margarine and sprinkle with flour (this is necessary to make the bread crispier). Place the dough in the Ultra and brush the top with water. Sprinkle a little flour over the mixture and cut a 1/2 cm crosswise cut into it with a knife. Cover the Ultra and bake for 85 minutes at 210°C (Gas Mark 7). No need to preheat! Let the bread cool and store it in the “Viennese Waltz” until the next day. Cut off the top of the bread and set it aside. Remove the inside so that it can still be sliced ​​and topped with toppings. Cut into slices and top like a sandwich (choose the toppings and those of your guests). After topping, cut the slices into bites of your choice (usually 4 cm x 4 cm). Place the bites back into the hollowed-out bread and close the lid. Tip: Always bake the bread a day in advance, so the breadcrumbs will separate more easily from the crust. This bread costs around €50 in Luxembourg, depending on the toppings.
