Suse's delicious pepper and rocket salad

Ingredients for 2 servings:

  • 200g Camembert(s)
  • 2 m.-sized onion(s)
  • 1 tsp olive oil
  • 200 g arugula
  • 4 medium-sized peppers, red or yellow
  • 2 tbsp balsamic vinegar
  • 1 bunch of basil
  • 5 tbsp vegetable broth
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Hardly any carbohydrates – very, very tasty

Place the Camembert in a baking dish and bake in a preheated oven at 200°C/180°C fan-assisted oven for 15 minutes. Wash the arugula, remove the stems, chop finely, and spin dry. Halve the peppers, remove the seeds, and cut into strips. Peel the onions and slice them into small rings. Combine the arugula, onion, and peppers in a bowl. Mix the broth with the balsamic vinegar, salt, and pepper, and whisk in the oil. Stir the finished dressing into the salad. Place the cheese on top of the salad, finely chop the basil, and sprinkle it over the salad.
