Ingredients for 1 servings:
- 250 g flour (type 405 or 550)
- 1 tsp baking powder
- 80 g sugar
- 1 tbsp vanilla sugar
- 1 m.-sized egg(s)
- 1 pinch of salt
- 3 tbsp milk
- 150 g butter
- 100 g hazelnuts, ground
- 4 apples
- 250 g quark, 40%
- 2 cups sour cream (alternatively sour cream, crème fraîche or mascarpone)
- 4 m.-sized eggs
- 150 g sugar

For the dough, sift flour and baking powder onto a work surface. Make a well in the center of the flour and add the sugar, vanilla sugar, egg, a pinch of salt, and milk. Spread the cold, cut-in-pieces butter on top and quickly knead everything together. You can also knead it using a food processor. Let the dough rest in the refrigerator for about 30 minutes. For the topping, put the quark, sour cream, eggs, and sugar in a mixing bowl and beat with a mixer. Peel, core, and slice the apples. Roll out the dough and place it in a greased and floured springform pan, covering the bottom and sides. Sprinkle the ground hazelnuts on the bottom. You can use more or fewer hazelnuts if you like. Arrange the apple slices on top and spoon the topping over them. Bake at 190°C (top/bottom heat) for 60 minutes. If the icing on top becomes too dark, cover the cake with baking paper.
