Swabian potato salad

Ingredients for 2 servings:

  • 1 large onion(s)
  • 200 ml vegetable stock
  • 4 tsp vegetable oil / olive oil
  • 60 g ham, without fat
  • 60 g gherkins
  • salt and pepper
  • 280 g potatoes
  • 6 tsp vinegar (white wine vinegar)

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes with their skins on, rinse well, and peel. Then slice them. Dice the ham. Finely chop the pickled cucumbers. Dice the onion, place it in a bowl, and pour the hot broth over it. Let it simmer for about 5 minutes. Brown the ham in a pan with oil. Now add the onions, vinegar, ham, oil, and pickled cucumber to the potatoes. Mix everything carefully. Let the potato salad simmer for a while before serving. Add a little more broth, if desired, and season with salt and pepper.
