Swabian yeast dumplings from the microwave

Ingredients for 4 servings:

  • 300 g flour
  • ½ cube of yeast or 1/2 sachet of dry yeast
  • 1 egg(s)
  • 150 ml water, warm
  • 1 pinch of salt

Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 15 minutes

Make a soft dough from the ingredients, ideally in a 2-liter bowl with a lid (microwaveable). Add a little flour or water if necessary. Then, cover the Knöpfle with a tea towel and let it rise in a warm place (e.g., next to the radiator) for about 30 minutes, until it has risen slightly. Then close the lid and microwave it at 600 watts for 4 minutes (that’s how it works with my microwave). Sometimes the lid pops off, but it’s not a problem! If it’s left in too long, it will have a bit of a hard edge, but you can easily trim it off and enjoy the rest of the delicious Knöpfle. It tastes best with lots of gravy! It also works with a little less flour; last time I made it, I only had about 220g of flour at home, but the Knöpfle was still really delicious!
