Ingredients for 2 servings:
- 600 g swede(s)
- 5 carrots
- 2 garlic cloves
- 1 onion(s)
- 400 ml coconut milk, unsweetened
- 1 tsp curry paste, green
- 1 tsp curry powder
- 1 tsp coriander powder
- Salt
- possibly mushrooms

Preheat the oven to 180°C (fan). Peel and finely dice the onion and garlic. Peel and dice the swede, and peel and slice the carrots. In a roasting pan or casserole dish with a lid, combine the coconut milk with the curry paste, curry powder, and coriander. Add the swede, carrots, onion, and garlic to the roasting pan and mix well. Add a little salt. Cover the roasting pan and cook the vegetables at 180°C for about 45 minutes. If you like mushrooms, you can add some mushrooms a few minutes before the end of the cooking time.
