Swedish Apple Sponge Cake

  • 4 Pc. Eggs
  • 180 g Sugar
  • 125 ml Sunflower or rapeseed oil
  • 125 ml Milk
  • 300 g Flour
  • 3 tsp Baking powder
  • 7 Pc. Apples
  • Cinnamon
  • 1 packet Vanilla sugar
  • 75 g Almond flakes or sliced ​​almonds
  1. Beat eggs and sugar for a few minutes until frothy. Gently heat the oil and milk in a saucepan and stir into the egg mixture. Mix the flour and baking powder, sieve and fold in.
  2. Roughly grate the apples with the skin on. Fold half of the grater under the dough. Put the batter on a baking sheet. Spread the remaining grated apple on top. Sprinkle generously with cinnamon, flaked almonds and vanilla sugar.
  3. Bake in the preheated oven at 180 degrees top / bottom heat on the middle rack for about 20 – 30 minutes until golden yellow.
