Sweet and salty maple breakfast cereal

Ingredients for 12 servings:

  • 165 ml maple syrup
  • 2 tsp vanilla extract
  • 125 ml olive oil
  • 1 egg(s)
  • 1.35 kg oat flakes, wholegrain
  • 225 g sunflower seeds
  • 225 g almond flour
  • ½ tsp cinnamon powder
  • Fruits, fresh, e.g. peaches
  • 450 g almonds, roasted and salted

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat the oven to 180°C (top/bottom heat). Separate the egg. Combine the maple syrup, vanilla extract, egg white, olive oil, and salt. In a separate bowl, combine the oats, almonds, sunflower seeds, almond flour, and cinnamon. Then add the wet ingredients to the dry ingredients and mix well. Press everything onto a baking sheet lined with parchment paper. Moisten your hands if necessary. Bake on the middle rack for about 25 minutes, until lightly browned. Rotate the baking sheet halfway through baking. Open the oven door once or twice to release steam. Let cool for one hour. The muesli can then be stored in a sealed container for up to one week. Add some fresh fruit in the morning, if desired. Approx. 7 g protein, 30 g carbohydrates, 22 g fat, approx. 335 kcal per serving.
