Mix water, salt, and flour and knead until the dough is no longer sticky, adding a little more if necessary. Roll out the dough and cut out round shapes. I always do this with a glass. Mix the tomato paste, oil, oregano, salt, and pepper and spread it on each dough circle. Make sure to leave some space around the edges. Top the dough with your favorite pizza topping, but use slightly less topping than for a regular pizza. In general, make sure there isn’t too much topping. The first few times I made the recipe, I experimented with individual dumplings until I found the right amount. Less is definitely more here. Then fold the topped dough into a pocket and press the edges together. The dough is stretchy, so it will work with a bit of practice. Then fry the pizza gyoza in oil. My kids like to eat them with ketchup or barbecue sauce.
