Sweet and sour pumpkin

Ingredients for 4 servings:

  • 1 ½ pumpkin(s) (butternut pumpkin)
  • 1 handful of Thai basil
  • 1 tbsp peanut oil
  • 6 tbsp rice vinegar
  • 60 g brown sugar
  • 2 tbsp soy sauce

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes

with Thai basil

Peel the pumpkin, remove the seeds, and cut into wedges. Grease a baking dish with oil. Arrange the pumpkin in it. Heat the vinegar, sugar, soy sauce, and 50 ml of water in a saucepan; dissolve the sugar. Brush the pumpkin with the mixture and bake in the oven at 180°C for about 30 minutes, turning occasionally. Add the basil leaves about 5 minutes before the end of the cooking time.
