Sweet and sour soy chicken with mango

Ingredients for 4 servings:

  • 200 g mango(s), frozen
  • 2 bell peppers, red
  • 200 g meat substitute (soy chicken), shredded
  • 2 garlic cloves
  • 1 onion(s)
  • e.g. sea salt
  • 1 tsp cayenne pepper
  • 2 tbsp oil for frying
  • 250 ml ketchup
  • 4 tbsp balsamic vinegar
  • 200 ml water
  • 4 sprigs of basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash and finely dice the bell peppers. Peel and finely dice the garlic and onion. Sear the soy chicken in the oil in a wok, adding the onions and garlic after 4 minutes. Season the chicken strips with cayenne pepper and salt, stir, and sear for another 4 minutes. Combine the ketchup, water, and balsamic vinegar and add to the wok. Add the mango and mix well. Simmer the dish on low heat for 15 minutes. Wash and chop the basil, and sprinkle it into the wok just before serving.
