Sweet and sour tofu

Ingredients for 2 servings:

  • 400g tofu
  • ½ can pineapple pieces or fresh pineapple, approx. 200 g
  • 2 spring onions
  • 3 slices of ginger
  • 2 tbsp ketchup
  • 2 tbsp vinegar
  • 1 tsp cornstarch, dissolved in a little water
  • 1 tbsp sugar
  • Salt
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cooking time: 15 minutes. Slice the tofu and cut the pineapple into small pieces. Finely chop the spring onions and ginger. Then fry the tofu slices in the oil. When they are golden brown, remove from the pan. Now fry the spring onions and ginger in a little oil over medium heat. Then add the ketchup and let everything cook for 1 minute. Season with salt to taste and add the sugar. Add a little water and the cornstarch dissolved in water to thicken the sauce slightly. Finally, add the pineapple pieces and warm briefly in the sauce. Then pour this sauce over the tofu slices and serve.
