Ingredients
 

  • 250 g Spelt flour
  • 150 g Brown sugar
  • 1 tbsp Baking powder
  • 1 pinch Salt
  • 1 tsp Cinammon
  • 0,5 tsp Grated nutmeg
  • 0,25 tsp Ground allspice
  • 0,5 tsp Ground ginger
  • 100 ml Apple juice
  • 75 g Melted butter
  • 2 Pc. Eggs
  • 1 piece Large tart apple, pitted, peeled and finely grated
  • 100 g Finely grated carrots
  • 75 g Chopped walnuts
  • 50 g Raisins

Instructions
 

  • Mix the flour, sugar, salt, cinnamon, nutmeg, allspice and ginger in a bowl.
  • In another bowl, stir together the eggs, apple juice and butter. Stir into the flour mixture in portions. Knead in the chopped nuts, raisins, grated carrots and grated apple.
  • Fill the dough into a greased and floured loaf pan and bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 60 - 75 minutes.
