Whole Grain Apple and Carrot Bread

Ingredients
 

  • 200 g Wholemeal rye flour
  • 200 g Flour
  • 1 tsp Bread spice mix
  • 1 tsp Cinnamon
  • 1 tsp Coarse sea salt
  • 1 tsp Sugar
  • 1 Yeast cubes
  • 1 Granny Smith apples
  • 1 Carrot
  • 250 ml Lukewarm water

Instructions
 

  • Dissolve the yeast and sugar in lukewarm water. Mix the flour, rye flour, salt, cinnamon and bread spices.
  • Add the flour mixture to the yeast solution and mix everything into a sticky dough.
  • Grate the apples and carrots and knead them into the bread dough (it is okay to create irregularities, then the bread will end up being wonderfully juicy).
  • Cover with a clean kitchen towel and let rest in a warm place for 2 hours.
  • Dust the risen dough with a little flour, knead again and place in a loaf pan. Let go for another hour.
  • Make a slit through the bread with the knife and brush with milk or water (for a nice crust).
  • Bake in a preheated oven at 175 ° C for 40 minutes until golden brown.
  • Take it out of the oven and let it cool slightly before cutting it. This bread can also be baked and frozen in advance!
