Sweet Quinoa Balls with Raspberry Stones on Avocado Cream

  • 30 g Chocolate 70% cocoa
  • 2 tbsp Melted butter
  • 50 g Ground almonds
  • 16 piece Frozen raspberries
  • Grated white chocolate for rolling

Ingredients for the avocado cream

  • 2 piece Ripe avocado
  • 100 g Cream cheese low in fat
  • 100 ml Cream
  • 2 tbsp Maple syrup
  • Lime juice

Preparation of quinoa balls

  1. Wash an organic lime (or alternatively organic lemon) with hot water, rub dry, rub the peel and squeeze out the juice. Set aside the juice, it will be used with the avocado cream.
  2. Put quinoa in a sieve and rinse with hot water, then drain. Bring the milk to the boil in a saucepan. Add the quinoa, cinnamon, sugar, vanilla sugar and lime zest and simmer with the lid closed on a low heat for about 20 minutes, stirring a few times. Remove the saucepan from the stove, allow it to swell and let it cool down.
  3. In the meantime, put the biscuits in a freezer bag and crumble them finely with a pasta roller. Grate the chocolate into small pieces.
  4. Put the quinoa in a bowl. Mix in the biscuits, softened butter, chocolate, ground almonds and knead everything together well. Cover and chill the quinoa mixture for 30 minutes.
  5. Shape the quinoa into 16 balls (2 cm in diameter) and press flat. Place a frozen raspberry in the middle and cover with the quinoa mixture. Shape the quinoa balls again and roll them in white chocolate.

Preparation of the avocado cream

  1. Cut the avocados in half with a knife. Separate both parts and remove the core. Scoop out the pulp from the avocados. Puree with lime juice, maple syrup or honey, cream cheese and cream.

Serving

  1. Spread the avocado cream on serving plates, place 4 quinoa balls on top and decorate with raspberries, sliced ​​almonds and possibly lemon balm.
