Ingredients
 

  • 1 Apple
  • 30 g Walnut kernels
  • 6 Free range eggs
  • 30 g Butter
  • 6 tbsp Sugar
  • 225 g Whole wheat flour
  • 0,5 tsp Freshly grated nutmeg
  • 0,25 tsp Ground cinnamon

Instructions
 

Preparation:

  • Preheat the oven to 180 ° C (gas mark 4).
  • Peel and core the apples and dice the pulp.
  • Roughly chop the walnut kernels.
  • Separate eggs.
  • Butter the box shape 23 x 12 centimeters with half of the butter and crumble it out.

Preparation:

  • 1. Melt the remaining butter in a pan.
  • 2. Sauté the apple pieces with the nuts in them. Let cool down.
  • 3. Beat the egg whites very stiff.
  • 4. Mix the egg yolks with the sugar in a bowl. And lift the stiff egg white underneath.
  • 5. Sieve the wholemeal flour over the mixture and mix in gently. It shouldn't coincide !!!
  • 6. Fold in the apple nut mixture even more carefully, being extremely careful that everything stays airy and does not collapse. It is best to lift it under it spoon by spoon.
  • 7. Pour the dough into the loaf pan, tap the pan 1 or 2 times on the work surface to knock out air pockets, and the dough will spread out better.
  • 8. Let the spiced bread bake for about 30-40 minutes. The spice bread is ready if you peck in the middle with a shashlik skewer and no dough gets stuck on it !!!
  • Goes with black tea and cream.
