Cherries with buttermilk cream

Drain the cherries, then bring to a boil in a small saucepan with lemon juice and 2 tablespoons of water. Cover and simmer for 3 minutes, then stir in the cherry jelly and Amaretto. Mix the sour cream with the buttermilk, vanilla sugar, and sugar until creamy. Whip the cream until stiff and fold in. Now fill each jar with 2 tablespoons of the cream and 2 tablespoons of the cherry mixture. To decorate, add 1 teaspoon of the cherry compote to the top white layer and chill for 1 hour. Place the pastry rolls on top and serve chilled. Tip: Cremefine also works wonderfully instead of the cream.
