Ingredients
- 500 g Marzipan raw mass
- 250 g Block chocolate
- 250 g Couverture whole milk
- 200 g Powdered sugar
- 330 g Cocktail cherries
Instructions
Sufficient for 96 chocolates
- We took Odenwald cocktail cherries, these have a drained weight of 110g per glass and we took 3 glasses.
- Drain the cocktail cherries.
- Pour the raw marzipan mixture into a mixing bowl and crumble. Then mix with the powdered sugar and knead into a dough.
- Heat the chocolate and whole milk in a water bath. The best thing to do is to take a heat-resistant plastic bowl of the appropriate height and put it together with the coarsely chopped chocolate in a saucepan with water. Bring the water to a boil and continue to simmer until the chocolate is liquid.
- Wrap the cherries thinly with the mazipan batter. For your fingers, if it sticks too much, use flour or powdered sugar. Then dip the cherries in the chocolate and let them dry on aluminum foil.
