Sweet lasagna with cherry compote and three kinds of Italian biscuits

Ingredients for 1 servings:

  • 2 jars of cherries, each 650 g total content
  • 20 g cornstarch
  • 500 g quark
  • 500 g mascarpone
  • 12 tbsp milk
  • 4 tbsp cane sugar
  • 1 cup of cream
  • 300 g amaretti biscuits
  • 150 g cantuccini with chocolate
  • 150 g cantuccini with almonds
  • Brown cane sugar for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 3 minutes; Total time approx. 6 hours 23 minutes

Drain the cherries thoroughly. Blend the cherry juice with the cornstarch until smooth and bring to a boil while stirring. Then add the cherries and let cool. Whisk the mascarpone, quark, sugar, and milk until smooth. Whip the cream and carefully fold in. Fill a lasagna dish first with the mixed biscuits, then with the compote, and finally with the quark. Dust evenly with brown sugar. Let stand for at least 5-6 hours. It’s great to make ahead.
