Ingredients for 1 servings:

  • 1 cube of yeast
  • 20 g salt
  • 100 ml water, cold
  • 1 kg flour, type 405
  • 500 ml milk, cold
  • 30 g sugar
  • 60 g butter, melted
  • 20 g cornstarch
  • Flour , for the work surface
  • Butter, for the mold

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Place the water, salt, and yeast in a jar and mix. Leave the jar in a bright, warm place for at least 1 hour. Then, using the dough hook of a hand mixer, roughly mix with the flour, milk, sugar, and cornstarch, adding the butter as you go. Knead the dough for 5 minutes by machine, then another 5 minutes by hand on a lightly floured work surface until you have a medium-firm dough. Place the dough in a bowl, cover, and let rise for about 2 hours. Preheat the oven to 200 degrees Celsius, knead the dough briefly again, then place it in a very large loaf pan or round springform pan lightly greased with butter. Brush the top of the dough with water. Let it rise briefly again, and then place it in the oven. After 5-10 minutes, cut the top of the bread several times, crosswise and lengthwise. To prevent the bread from baking too hard, we recommend pouring a cup of water onto a baking sheet and placing it in the oven. Bake for another 25-30 minutes. Before removing the bread, check with a toothpick to make sure it’s fully baked. The total baking time should not exceed 40 minutes. If using fan-assisted oven, reduce the heat to 180 degrees Celsius after 10 minutes.
