Ingredients for 4 servings:
- 500 g sweet potatoes
- 400 g carrot(s)
- 1 m.-sized onion(s)
- 40 g ginger, grated
- 3 tbsp, heaped horseradish, fresh, grated
- 1 liter vegetable stock
- Extra virgin olive oil
- salt and pepper
- chili flakes
- lemon juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
With horseradish and ginger
Peel the sweet potatoes and dice them. Peel the carrots and slice them thickly. Roughly chop the onion. Cook everything in the vegetable broth for about 20 minutes. Drain the broth and roughly mash the vegetables. Stir in the ginger and horseradish, then add the olive oil. Season to taste with salt, pepper, chili flakes, and lemon juice. Serve as a side dish with fish, meat, or bratwurst.
