Sweet Potato and Cinnamon Muffins

The perfect sweet potato and cinnamon muffins recipe with a picture and simple step-by-step instructions.

Also:

  • 3 tsp Tartar baking powder
  • 1 pinch Salt
  • 70 ml Buttermilk
  • 70 ml Milk
  • 2 Pc. Eggs
  • 100 g Butter
  • 120 g Raw cane sugar
  • 1 Pc. Medium-Sized sweet potato, cooked
  • 1 tsp Cinnamon
  • 1 tsp Cinnamon
  • 2 tbsp Raw cane sugar
  • 1 tbsp Butter
  1. Puree the soft sweet potato and stir together with the eggs, soft butter, sugar, salt, buttermilk and milk in a bowl until creamy. Mix the flour, baking powder and cinnamon and stir in briefly.
  2. Divide the dough into 10 – 12 muffin molds and bake in a preheated oven at 180 degrees top / bottom heat for about 30 minutes until golden yellow.
  3. Brush the warm muffins with melted butter and sprinkle with cinnamon and sugar. Alternatively, cover with chocolate icing.
