- 3 tsp Tartar baking powder
- 1 pinch Salt
- 70 ml Buttermilk
- 70 ml Milk
- 2 Pc. Eggs
- 100 g Butter
- 120 g Raw cane sugar
- 1 Pc. Medium sweet potato, cooked
- 1 tsp Cinnamon
- 1 tsp Cinnamon
- 2 tbsp Raw cane sugar
- 1 tbsp Butter
Instructions
- Puree the soft sweet potato and stir together with the eggs, soft butter, sugar, salt, buttermilk and milk in a bowl until creamy. Mix the flour, baking powder and cinnamon and stir in briefly.
- Divide the dough into 10 - 12 muffin molds and bake in a preheated oven at 180 degrees top / bottom heat for about 30 minutes until golden yellow.
- Brush the warm muffins with melted butter and sprinkle with cinnamon and sugar. Alternatively, cover with chocolate icing.
