Sweet potato brownies

Ingredients for 1 servings:

  • 300 g sweet potatoes
  • 200 g dark chocolate coating
  • 200 g butter
  • 160 g sugar
  • 3 eggs
  • 60 g wheat flour
  • 60 g cocoa powder
  • ½ tsp baking powder
  • ½ tsp salt

Peel the sweet potatoes, cut them into chunks, and boil them in a saucepan for about 20-25 minutes until they are soft. Then set the potatoes aside and let them cool slightly. Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). Melt the chocolate coating in a water bath and set it aside to cool slightly. Mix the butter and sugar in a large bowl with a mixer. Then gradually add the eggs and mix until fluffy. In another bowl, combine the flour, cocoa powder, baking powder, and salt. Mash the sweet potatoes with a fork or masher until they form a paste. Add the sweet potato mash to the butter, sugar, and egg mixture and mix. Then gradually stir in the melted chocolate coating. Finally, stir in the flour and cocoa mixture and mix everything well again. Line a rectangular baking dish or baking pan (approx. 30 x 20 cm) with parchment paper and pour in the batter. Bake in the oven for about 30-40 minutes and then let it cool. The brownies are very fudgy. Depending on your taste, you can add nuts or cover the brownies with chocolate. Enjoy!
