Sweet potato – carrot – ginger soup

Ingredients for 4 servings:

  • 300 g onion(s), finely chopped
  • 4 tbsp butter
  • 3 tbsp ginger, freshly grated
  • 12 carrots, peeled and diced
  • 2 sweet potatoes (orange flesh), peeled and diced
  • 950 ml chicken broth
  • 225 ml orange juice (preferably freshly squeezed)
  • some salt and pepper
  • Nutmeg, freshly grated
  • some orange zest

Sweet Potato Carrot Soup – a classic delicious heart-warming soup from the USA

Melt the butter in a large, heavy saucepan. Cover and simmer the onions and grated ginger on low heat for about 25 minutes. Then add the carrots, sweet potatoes, and chicken stock and bring to a boil. Reduce the heat and simmer gently with the lid on for about 45 minutes. Check the carrots for tenderness. Purée the soup with an immersion blender. Add the orange juice and spices and return to the heat. Stir, season to taste, and grate in some nutmeg. Serve hot. Tip: If you like, you can also sprinkle homemade croutons on top.
